HOW TO BREW THE PERFECT CHAI
CLASSIC BREW METHOD
(at home)
USING A STOVE TOP
- Add ½ a mug of boiling WATER per person to a pot (approx. 140ml).
- Add 1 HEAPED tablespoon (15g) of FRESH CHAI per person to the pot.
- Low simmer for up to 5 MINS (warning: rapid boil kills the chai) remember to give it a bit of love with a few stirs.
- Add ½ a mug of your choice of MILK per person (approx. 140ml).
- Slowly heat until you can just see the STEAM.
- STRAIN and add extra honey to taste (or vegan friendly goodness)
- Kick back, relax and enjoy!
CAFÉ STYLE BREW METHOD - 80Z
(Regular Size Cup 8oz = 278ml)
USING A STEAMER, OR ESPRESSO MACHINE
- Add 1 HEAPED tablespoon fresh chai to a milk jug (17g or 13g for turmeric chai).
- Cover with 90ml/g boiling water and stir well.
- Steam with wand on low for 10 sec.
- Allow tea to steep for 1-2 mins (MINIMUM)
- Add 180ml/g milk of choice to milk jug with chai water and steam together.
- Strain and serve with light shake of ‘chai dust’ to garnish.
CAFÉ STYLE BREW METHOD - 12OZ
(Large Size Cup 12oz = 405ml)
USING A STEAMER, OR ESPRESSO MACHINE
- Add 2 MEDIUM tablespoons fresh chai to a milk jug (25g or 20g for turmeric chai).
- Cover with 130ml/g boiling water and stir well.
- Steam with wand on low for 10 sec.
- Allow tea to steep for 1-2 mins (MINIMUM)
- Add 260ml/g milk of choice to milk jug with chai water and steam together.
- Strain and serve with light shake of ‘chai dust’ to garnish.
CAFÉ TEA POT METHOD
(Large Size Cup 12oz = 405ml)
USING A STEAMER, OR ESPRESSO MACHINE
- Add 2 MEDIUM tablespoons fresh chai to a milk jug (25g or 20g for turmeric chai).
- Cover with 200ml/g boiling water.
- Steam with wand on low for 10 sec.
- Add 200ml Milk of choice to the same jug and steam
- Add chai to tea pot and stir well (no strainer allows flavour to spread better).
- Steep for 2 minutes with customer before serving.
CAFÉ FRESH CHAI CONCENTRATE METHOD
Makes 1.4 litres.
FIRST FIND A COMFORTABLE CROSS LEGGED SITTING POSITION WITH YOUR BACK UPRIGHT.
Take 3 long deep breathes exhaling any thoughts of coffee with each breath… then concentrate your thoughts on chai…?
Slow brew concentrate is very handy to keep you going through busy times or for Iced Chai. Simply double or triple for larger volumes.
- Bring 1.6 Litres water to boil.
- Stir in 224g Fresh Chai (Masala blend is our favourite for ICED), add 50g extra honey (better flavour for iced in particular).
- Simmer for 4 minutes on very low.
- Strain with large fine mesh strainer.
- Allow to cool, and store in fridge for up to two weeks.

SERVING ICED
For Iced Chai’s (1/2 fresh chai concentrate, 1/2 milk + some ice)
